Chewy Butterscotch Cookie Recipe
I'm not sure if this is possible, but maybe you're a little tired of plain old chocolate chip cookies or the slight twist on that classic, white chocolate chip cookies. If you're wanting to try something a little new try this awesome butterscotch cookie recipe.
Butterscotch is similar to caramel, but not quite the same. It makes a great and easy way to take a classic dessert and make it just a smidge different.
These butterscotch cookies are great for any occasion. They're perfect for get-togethers, birthdays for everyday snacking. Well, you probably shouldn't eat them eeeeeveryday.
This recipe is super easy to make, no chill time required and you can whip up a batch and just about 30 minutes!

Step One
Before you get started make sure to pre-heat your oven to 350 degrees.
To get started, you want to get a stand mixer, your butter and your sugar. This stand mixer is super duper awesome. It is a little pricey, but it's heavy duty and can hold up to lots of batches of cookies. If you're looking for one a little less expensive, we also use this mixer as well and it works great.
Once your sugar and butter are in your mixing bowl, turn your stand mixer on to high and beat them together. You want to make sure that they are thoroughly and completely mixed, no butter chunks left over.
In order for your butter to thoroughly mix with your sugar you need to make sure that it is softened before you get started. To soften butter, the best way is to leave it on your counter for a few hours before use.
However, if you forgot to take your butter out or if you're in a rush you can pop it in the microwave for just a few seconds at a time until it is soft. Make sure to check frequently so that it does not start to melt.
Step Two
Now that you've thoroughly mixed your butter and sugar, you want to add in your other to wet ingredients. Break your eggs into your mixing bowl and also add your vanilla extract.
Turn your stand mixer on medium and mix all four ingredients together so that they are thoroughly combined.
Step Three
Next you want to get all of your dry ingredients mixed together as well. In a separate bowl from your wet ingredients place your flour salt and baking soda together. Gently stir them together until they are completely mixed.
Step Four
Now you want to come by and your dry ingredients and your wet ingredients. Very slowly add your dry ingredients into the mixing bowl with your wet ingredients
Once all of the dry ingredients have been added, you want to start to mix everything together. You can use your stand mixer on low to do this. Or you can mix them by hand.
Step Five
Here's where we add our butterscotch chips! Dump your butterscotch into your cookie dough. Then slowly with a spatula, fold the chips into your dough.
Step Six
Using a heaping tablespoon (about one-and-a-half tablespoons) place balls of cookie dough onto a non-stick or greased cookie sheet. You want to ensure that your balls of cookie dough are placed far enough apart that they won't run together as your cookies bake.
Step Seven
Place your baking sheet with all the cookie dough into your preheated oven. And set a timer for 8 minutes. Your cookies will take anywhere from 8 to 12 minutes to thoroughly cook. Times can range depending on size of cookies, altitude, and your oven.
Start checking your cookies after 8 minutes. Once you see crisp, slightly brown edges you can pull them out and let them cool.

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 2 cups butterscotch chips
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- add in butterscotch chips
- spray cookie sheet with canola oil
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
