How To Make S'mores Cookies
What could be better than gooey marshmallows sandwiched in between melted chocolate and crisp graham cracker cracker? Nothing really! Whether it's at a campfire outside, backyard BBQ, or just for an everyday snack s'mores are the perfect summer flavor.

And really, s'mores can be packed into any dessert - like these s'mores Rice Krispie treats. If you're a true s'mores affeccionado you can even make these homemade s'mores . They are complete with instructions to make your own graham crackers, marshmallows, and dark chocolate all of which could be used in this s'mores cookie recipe too!
Now, you may be thinking making a s'mores cookie recipe seems complicated. However, if you can make a classic chocolate chip cookie, a butterscotch cookie, or even a peanut butter cup cookie you can definitely make these cookies too! All of my recipes strive to be super user-friendly and easy to make so that anyone can make them at home.
Step One
The first thing you need to do is to cream your butter and sugar together in a mixing bowl. But before you start that, do make sure that you pre-heat your oven to 350 degrees.
Once you've got your oven going, you can get started with your sugar and butter. You want to use a stand mixer or a hand mixer as a butter can be difficult to cream. You want to thoroughly mixed together your butter and sugar on high. This will take you several minutes.
Step Two
Now combine your eggs and vanilla extract with your creamed butter and sugar. You want to turn your mixer on medium and beat everything together for a couple of minutes.
Step Three
The third thing you want to do is get together all of your and dry ingredients. Grab a separate bowl and toss in your salt baking soda and flour. Gently stir these items together until they are thoroughly mixed.
Step Four
The fourth thing we're going to do is go ahead and get everything all combined into one. To do this, you want to take your bowl of dry ingredients and slowly add them to your mixing bowl with your wet ingredients.
Once everything is in one bowl, you want to go ahead and get it mixed all together. You can do this by turning your mixer on low or you can fold everything together by hand. Make sure that you don't need any leftover ingredients on the sides of your bowl you want everything well combined.

Step Five
Now we're getting an add in all of our goodies. Gather together the marshmallows, chocolate chips and graham crackers (make sure these are crumbled up into small pieces).
Note: I used mini marshmallows but you could certainly use large marshmallows I might suggest cutting them in half. As an alternative to chocolate chips you could certainly use chocolate chunks. And I use Golden grahams as an alternative to graham crackers.
Toss your chocolate, marshmallows and graham crackers into your cookie dough and slowly fold everything together until it is well combined.
Step Six
Once everything is completely mixed, let's get your cookie dough onto your baking sheet. Grab a nonstick or pre greased baking sheet and slowly start adding the cookie dough.
I used heaping tablespoons for each cookie probably about 1 and ½ tablespoons worth of dough. Make sure that you pack your balls of cookie dough tightly and separate them evenly on your cookie sheet so that they don't run together during baking.
Note: if you want your cookies to look extra fancy, you could add a little of your s'mores topping mix on the top of each ball press the marshmallows chocolate and or graham crackers into the top so that it will top each cookie. Alternatively, you could do this after they finished baking. Or you can just leave them as is.
Pro tip: you can chill your cookie dough if you would like cookies to hold their shapes better. I usually don't unless I am making cut-out cookies, I like my cookies to be is easy and fast to make as possible.
Step Seven
It'll take about 8 to 12 minutes for your cookies to bake at 350 degrees. Baking time can vary based on size of cookie dough balls, your oven, and altitude.
I like to set a timer starting at 8 minutes and then check cookies regularly every minute or two until they are done. You'll know they're done when the edges are slightly Brown and the middles are no longer liquidy. The center can still be a bit soft, this will firm up as they cool off.
When finished baking, remove cookies from oven or let them cool and then enjoy!

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 1 cup chocolate chips
- ½ cup graham crackers or Golden Grahams cereal
- ½ cup mini marshmallows
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- add in chocolate chips, graham crackers, and mini marshmallows
- spray cookie sheet with canola oil
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
