After making some delicious butterscotch cookies the other day I started thinking of another flavor I totally LOVE, salted caramel. So I decided to try to make a batch of salted caramel cookies as well.

Easy Salted Caramel Cookies
Salted caramel is just the most perfect combination of sweet and salty. So I was super excited when I decided to try a salted caramel cookie recipe.
Unfortunately, when I got to the store they didn't have any salted caramel chips. At first I was a little discouraged. But then, I got a great idea!
Sure, you could use salted caramel chips in your cookies the same way you do white chocolate chip cookies and classic chocolate chip cookies. But you certainly can't use them that way if you can't find any!
So then I realized, they didn't have salted caramel baking chips, but they did have... Caramel candy. And quite frankly, I was willing to try anything to get the salted caramel cookies that I've been dreaming of.
So, with a little creativity, I came up with the following easy, super delicious salted caramel cookie recipe. And if you're a salted caramel addict like I am, you might pair the salted caramel cookies with this super awesome salted caramel latte.

Step One
Tip: don't forget to pre-heat your oven to 350 degrees. It would be a real bummer if you got your cookie dough ready and your oven wasn't ready to cook them.
The first thing you need to do is to mix together your butter and sugar. In order to do this you'll need to use a stand mixer.
Toss your sugar and softened butter into your mixing bowl. To get softened butter, you simply need to let your butter sit on the counter at room temperature for a few hours before using it. If you don't have time for that you can toss it in the microwave just make sure to keep a close eye so it doesn't start to melt.
Toss your softened butter and sugar into your bowl, flip your stand mixer on to high speed and beat them together for several minutes. They're done when there's no more of chunks of butter left.
Step Two
The next thing you want to do is to mix in the rest of your wet ingredients. Get your eggs and break them into your mixing bowl. Get your vanilla extract and add that too.
Then turn your mixer back on and mix your batter thoroughly until everything is completely mixed together. You can use a medium speed for this step. It should only take a couple of minutes.
Step Three
Next up for your dry ingredients. Gather together your flour baking soda and salt toss them into a different mixing bowl and stir them together.
Step Four
Now we're going to add the dry ingredients and the wet ingredients together. You want to add your dry ingredients very slowly to the mixing bowl with your wet ingredients already in it.
The next step you can do either with a spatula by hand or with your stand mixer. Either way, make sure to mix slowly. Fold and mix your dry ingredients in with your wet ingredients until you have a consistent cookie dough with no chunks of any one ingredient left.
Step Five
Here's where I had to get creative with my caramel candies. Since I didn't have salted caramel baking chips to just toss in my cookie dough I had to figure out how to add my caramel.
I took about 1 and ½ teaspoon size balls of cookie dough and I wrapped the cookie dough around each single caramel candy. Do this for all of your caramels.
You will get a little lump in the center of your cookies. To avoid this, you can cut caramels in half OR you can use more cookie dough to wrap the caramel.
Step Six
Place each of your caramel cookie dough balls onto a pre greased or non-stick cookie sheet. Make sure that they are spread far enough apart that your cookies won't run together as they're baking.
Add an extra crank or two of salt on top of each of your cookie caramel balls.
Step Seven
Take your baking sheet with your balls of cookie dough on it and place it in your preheated oven. Set a timer for 8 minutes. Your cookies can take 8 12 minutes total cook time will vary based on oven altitude and size of dough balls.
Cookies are completely baked when the edges get crisp and slightly brown. When they're done pull them out of the oven let them cool and then enjoy!

Salted Caramel Cookies
Equipment

- cookie sheet

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 30-40 caramel soft candies
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- spray cookie sheet with canola oil
- Unwrap caramel candies
- Make balls of cookie dough and wrap them around the caramel
- (Optional) cut caramels into quarters and add after flour
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
