Who doesn't LOVE chocolate and peanut butter? And peanut butter cups are the perfect combination of the two. That's why we decided to make Peanut butter cup cookies!
How To Make Peanut Butter Cup Cookies
Quite frankly, I can't ever say no to peanut butter cups. They're so full of chocolate and creamy peanut butter and just so so good! But sometimes you want something just a little different. And here's where the peanut butter cup cookie recipe comes in.

Now, I wasn't really sure how these were going to turn out to be quite honest. After all peanut butter cups are quite a lot bigger than your normal add ins to cookies such as M&M cookies, white chocolate chip cookies, Reeces pieces cookies and your classic chocolate chip cookie. But I knew if there is any way to make it happen I could figure it out and they would be delicious!
I made sure to use mini peanut butter cups, that way it wouldn't be too big to put in the center of the cookies. Now this isn't like an M&M cookie, or your classic chocolate chip cookie where you add in ingredient is sprinkled throughout the entire cookie. We're going to take your peanut butter cup and place it in the middle of your cookie. Just like with these Peppermint Patty cookies This does mean, that the very edges of your cookie will be plain cookie and not have any of the extra chocolate peanut buttery goodness added in.
Step One
Before you get started making your cookie dough, you want to make sure that you have your oven preheated to 350 degrees.
Once your oven is preheated you can get started making cookie dough. Using a mixing bowl and stand mixer add in softened butter and sugar. You want to beat together your butter and sugar on high until they are thoroughly mixed or creamed. This takes several minutes.
This process aerates your butter. But make sure not to mix them too much.
Step Two
Now that your butter and sugar are creamed together you need to add your eggs and vanilla extract. Crack your eggs into your mixing bowl and add the vanilla.
Turn your stand mixer on medium and beat all of your ingredients together for 1 to 2 minutes or until thoroughly mixed.

Step Three
The third step is getting your dry ingredients mixed together. In a separate bowl, toss in your flour, baking soda and salt. Combine them all together thoroughly.
Step Four
Now you're going to get everything all mixed together in one bowl. Slowly add your dry ingredients with your wet ingredients.
Using your mixer or a spatula by hand, mix all your ingredients together. Make sure you do this slowly. As you're mixing, scrape any ingredients on the sides of the bowl down into your cookie dough.
Step Five
Next, gather and unwrap your mini peanut butter cups. There's two ways you can add them to your cookie dough. I choose the first way, but the second is also delicious.
Option 1: take your mini peanut butter cup and wrap it in a thick layer of cookie dough so that you have a solid ball of cookie dough with the peanut butter cup solidly in the middle.
Option 2: take a tablespoon and a half of cookie dough roll it into a ball make a thumbprint in the middle and simply place your mini peanut butter cup in the thumbprint so that it sits on top of your cookie dough.
Step Six
Place your balls of cookie dough with peanut butter cups on to your baking sheet. It's best to use either a non stick baking sheet or one that has been pre greased with butter or a nonstick cooking spray.
Make sure that your balls of cookie dough are spread evenly apart so that as they begin to cook they will not run together.
Step Seven
Go ahead and place your baking sheet into your oven. Set a timer for 8 minutes. Your cookies may take anywhere from 8 to 12 minutes to cook. But you want to start checking on them around the eight-minute mark so they don't burn.
Your cookies are completely cooked when the middles are no longer liquidy and the edges are slightly crisp. You can remove the baking sheet and cookies from your oven and allow them to cool. Make sure that cookies are completely cooled before trying to remove from your baking sheet otherwise they may fall apart especially with the peanut butter cups in the center.

Peanut Butter Cup Cookies
Equipment

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 30-40 miniature peanut butter cups
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- spray cookie sheet with canola oil
- Unwrap miniature peanut butter cups
- Make balls of cookie dough and wrap them around the miniature peanut butter cups
- (Optional) cut miniature peanut butter cups into quarters and add after flour
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
