Making The Best Chocolate Peanut Butter Chip Cookie Recipe

If you have an undying love for chocolate, this recipe is for you. It's everything you dream of a Peanut Butter cup being but in cookie form.
It's such a simple concept but is profoundly delicious. You take a regular Chocolate Cookie and just add in peanut butter chips. This recipe is easy peasy and definitely worth the time it takes to mix and cook.
If you've ever made our Double Chocolate Cookies, Chocolate Chip Cookies, or Chocolate Cookies, you are in familiar territory.
Let's get straight to it!

Step One
Start out by preheating your oven to 350 degrees. Then pull out your favorite stand mixer. We use a KitchenAid but if you want something smaller and cheaper you can try out this Hamilton Beach model.
Once you have your mixer, add in your sugar, brown sugar, and pre-softened butter. Mix them all together on high until they are thoroughly creamed together.
You can pre-soften your butter easily by setting it out on the counter prior to mixing everything together. You can also soften it in the microwave by heating it in 5 to 10 second increments. Just be sure not to melt the butter.
Step Two
Now you will add in your eggs and vanilla. Pour them directly into the creamed sugar and butter mixture. Do this using the medium setting. You want them to be mixed well but do not over beat the eggs.
Step Three
The next step involves premixing your dry ingredients in a separate mixing bowl. Put your pre-measured flour, baking soda, and salt into the bowl and mix them together with a fork.
Step Four
It's time to combine the dry and wet ingredients together and make the actual cookie dough.
You will want to set your mixer on the lowest setting and pour your dry mixture in very slowly. Go to quickly or use too high of a mixing speed and you may end up throwing powder everywhere.
Once you have everything mixed together, add in your cocoa powder. Mix the cocoa powder into the dough slowly. Soon you will have a dark, chocolatey cookie dough.
The final part of making the dough is adding in your peanut butter chips. Pour them directly into the dough and mix them in using your mixer or folding them in by hand (or spatula).
Step Five
Chilled cookie dough balls work best and hold their shape when baking. If you want to chill them simply put your dough in the fridge after mixing. They should chill enough in a few hours.
Next, you will want to take a tablespoon size measuring spoon and scoop out heaping spoonfuls (usually about 1 ½ tablespoons worth). Place them about 2 inches or so apart on a non-stick cookie sheet, baking stone, or a baking pan sprayed with baking spray.
Once your cookies are formed and spread out, you can take a fork and smash them down a little in a crisscross pattern. This helps the thicker cookies flatten out while baking and you don't end up with more round cakier cookies.

Step Six
Put your cookies in the oven for about 10 to 12 minutes. Sometimes your location, oven, altitude, etc can alter the cookie times and temperature. You will want to monitor them the first time you make them.

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 2 ½ cups flour
- ¾ cup cocoa powder
- 2 cups peanut butter chips
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- add in cocoa powder
- pour in peanut butter chips
- spray cookie sheet with canola oil
- put cookie dough balls onto cookie sheet
- optional: press a fork into the ball in a crisscross pattern to slightly flatten it
- bake for 10 to 12 minutes
- allow to cool and enjoy
