How to Make White Chocolate Cranberry Cookies
Do you love cranberries? Do you also love white chocolate chip cookies? Then you'll love these cookies for sure!
Dried cranberries give the perfect combination of tartness and a little sweet. Combine that with the creamy sweet white chocolate and you've got the perfect pair!
If you love cranberries you've probably tried cranberry oatmeal cookies. But these white chocolate cranberry cookies have the extra added bang of white chocolate chips.
I was really excited to get this white chocolate cranberry cookie recipe together. I knew the flavors would be delicious. And is an extra bonus the white chocolate chips and the red dried cranberries make for a beautiful, festive cookie.
Just like with my best chocolate chip cookie recipe I wanted to make a cookie that was chewy and soft. And as with all of my cookie recipes, I wanted these cookies to be as easy to make as possible.

Step One
Hint: make sure that you pre-heat your oven to 350 degrees. It will need to be pre-heated before you start baking cookies.
The first step to get your cookie dough ready is to cream your butter and sugar together in a mixing bowl. You'll want to use a stand mixer for this process. I LOVE this stand mixer, it is heavy duty and easily creams the butter. But for fast cookies I use this smaller mixer also.
Before you get started make sure that you have softened butter. Your butter can be softened simply by leaving it out for a few hours before starting on your cookies. If you don't have time or you simply forgot you can always pop your butter in the microwave for a couple seconds before getting started. Do make sure that it doesn't start to melt, just gets soft.
Set your stand mixer on high and cream together your butter and sugar until they are thoroughly combined. This process should take a few minutes.
Step Two
The next step is to combine the rest of your wet ingredients in with your butter and sugar. Go ahead and crack your eggs into your butter and sugar and then add your vanilla extract.
Again turn on your stand mixer, this time to medium, and beat your eggs and extract into your butter and sugar mixture. you want to be sure that everything is thoroughly mixed together. This typically takes a minute or so.
Step Three
Now that all your wet ingredients are thoroughly combined, you want to get started with your dry ingredients. Get a separate bowl and add in with flour, baking soda and salt.
Slowly combine all of your dry ingredients together so that they are thoroughly mixed. You can do this simply with a spoon or fork by hand.
Step Four
Now that we have two bowls - one with combined wet ingredients and one with combined dry ingredients, we need to get all the ingredients into one single bowl. Very slowly, add your dry ingredients to the mixing bowl with your wet ingredients. Be sure not to dump them too fast so that the flour doesn't go everywhere!
Once you've added all of your wet and dry ingredients you want to mix everything together. You can use either your stand mixer or you can do this by hand. Either way make sure to do it slowly so that the flour doesn't go everywhere.
Make sure that everything is thoroughly combined, including scraping any of the ingredients off the sides of your mixing bowl.
Step Five
Now you want to get your cranberries and white chocolate added to your cookie dough. Go ahead and dump the cranberries and white chocolate chips into the mixing bowl with your cookie dough. Slowly, by hand, fold the cranberries and chocolate white chocolate chips into the mixture so that everything is thoroughly combined.
Step Six
Now we are going to make our balls of cookie dough. Using a 1 tablespoon measuring spoon scoop heaping spoonfuls of cookie dough. Each ball of cookie dough should be approximately one and a half tablespoons in size.
Place each ball of cookie dough onto a nonstick or pre greased cookie sheet. Make sure the balls of cookie dough are well-formed so that they do not fall apart while cooking. You also want to make sure that they are spaced far enough apart that they do not run together while baking.
Step Seven
Place your baking sheet complete with balls of cookie dough on it into your oven. Make sure to set a timer for 8 minutes. Your cookies can take a total of 8 to 12 minutes to cook but you want to start checking on them after 8 minutes so that they don't end up overcooked.
Once cookies have slightly browned and crisp edges they are ready to remove from the oven to cool. Once you've given them time to cool it's time to eat!

White Chocolate Cranberry Cookies
Equipment

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 1 cup white chocolate chips
- 1 cup dried cranberries
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- add in white chocolate chips and dried cranberries
- spray cookie sheet with canola oil
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
