I have to admit, candy corn isn't my favorite Halloween candy. However, candy corns always look so cute! So when I saw some in the store I thought what can I do with these to make them yummy? I decided to make some candy corn cookies.
How to Make Candy Corn Cookies

So, it turns out that while candy corn might not be a favorite by itself, they go super well when combined with cookie dough! When you combine the candy corns with cookie dough it gives the sweet chewy cookies the perfect amount of extra sugar crunch of the candy corns.
These Candy Corn cookies certainly have a different flavor profile than many of your standard cookies such as classic chocolate chip cookies, white chocolate chip cookies, or even these M&M cookies. But they do make a perfect, festive cookie for any Fall or Halloween occasion.

These cookies are delicious, but are also super easy to make. All cookie recipes that I develop, I try to make as easy as possible. And this recipe is no exception. There is no chill time required so you can get them baked up in less than 30 minutes.
Step One
Before you get started, make sure that you pre-heat your oven. You want to preheat to 350 degrees.
Now that your oven is preheating, you can get started! First you're going to combine your butter with your sugar. To do this you're going to use a stand mixer.
Make sure that your butter has been softened otherwise it's going to be near impossible to get it thoroughly combined with your sugar. To soften butter is very simple. You can either pop it in the microwave for a couple seconds making sure that it doesn't actually start to mount. Or you can simply leave it on your counter for an hour or so before getting started making your cookies.
Once you've added your butter and sugar to your mixing bowl, turn your stand mixer on high and cream them together. This process should take a couple of minutes. When finished both butter and sugar should be thoroughly combined.
Step Two

Now you want to add in your eggs and vanilla extract. Go ahead and crack your eggs and add the vanilla into your already combined butter and sugar.
Mix all of these items together on medium for 1 to 2 minutes or until thoroughly combined.
Step Three
Now you want to turn your attention to your dry ingredients. Get out a separate bowl and place in it your flour, salt, and baking soda.
Once you have your dry ingredients added to the Bowl you want to store them together until they are thoroughly combined.
Step Four
Now we're going to mix everything together. Slowly add your dry ingredients to the bowl containing your wet ingredients. Once your dry ingredients have been added you can start to combine everything.
When you mix your dry ingredients with your wet ingredients you can do this either by hand or with your stand mixer. Whichever way you choose, you want to make sure that you mix things slowly so that they don't go everywhere. Also make sure to scrape all ingredients off of side of the mixing bowl as you go.
Step Five
Now we're going to add our last ingredient. Take your candy corn and add them to your cookie dough. Once added you can fold them into the cookie dough until they are mixed well.
Step Six
Once your candy corn is mixed in we can start to make cookie dough balls. I like to use a measuring tablespoon to make the perfect sized cookie dough balls. I get a heaping tablespoon so that it's about 1 and ½ tablespoons of dough per cookie.
You can certainly make your cookies bigger or smaller if you like just make sure to adjust cooking time accordingly.
Take your balls of cookie dough and place them on a pre-greased or non-stick cookie sheet. You want to make sure that the balls are firmly pressed together so that they don't fall apart.
Step Seven
Now we can get our cookies baking! Take your baking sheet with your cookie dough and place it in your preheated oven. The cookies will take eight to twelve minutes to bake completely.
Baking times can vary depending on altitude, size of cookies and oven. So, set a timer for 8 minutes to start and check cookies often after the 8 minutes so that they don't overcook.
Cookies are ready to come out of the oven when edges appear slightly crisp and brown. Remove cookies and baking sheet and let cookies cool. They are then ready to eat!

Ingredients
- ½ teaspoon salt a couple grinds
- 1 teaspoon vanilla
- 1 ¼ teaspoon baking soda
- ¾ cup brown sugar
- 1 cup butter 2 sticks
- 1 ¼ cup sugar
- 2 eggs
- 2 cups candy corn
- 2 ½ cups flour
Instructions
- preheat oven to 350°
- put butter, sugar, and brown sugar in mixing bowl and mix together
- add in eggs and vanilla
- add in flour, baking soda, and salt
- mix everything together
- add in candy corn
- spray cookie sheet with canola oil
- put cookie dough balls onto cookie sheet
- bake for 10 to 12 minutes
- allow to cool and enjoy
